Despite San Fran’s capricious weather, there is no denying summer is in full swing. Unfortunately, I’ve got another two weeks before I can say (or rather scream) the same about vacation time. Which is why I thought that a quick (and rewarding for all that hard work! 😉 ) summer recipe would be most appropriate.
Blackberry-Banana Frozen Yogurt
Ingredients
2 cups yogurt (I used my own, homemade, out of 1% milk)
¾ cup half&half
½ cup sugar (I would probably do ¾ next time, although the hubby insisted it was just the right amount of sweetness)
10 oz frozen blackberries
1 small ripe banana
1 tsp vanilla
Directions
In blender:
1. “Break down” the frozen blackberries. Set aside.
2. Blend: yogurt with banana and vanilla.
3. Add the half & half, the sugar, and the frozen blackberries. Blend well until the mixture is smooth enough for your ice cream machine.
4. Freeze as according to the ice cream machine instructions.
